Parlez-vous français?

Both are correct.
In current spoken French, the verb-subject inversion for interrogative sentances is rarely used anymore unless required by a particular pronoun like “qui/que/quel/quelle…”. Most of the time, people will just use an interrogative tone of voice:
Vous parlez français?
or use “est-ce-que” (literally : “is it (so) that…” )
Est-ce-que vous parlez français?
Are much more common than “Parlez-vous français?”
But if you say “Vous parlez français?”, you have to get the tone of voice right.
